The Sous Chef Milano Panettone is the panettone of all panettoni! We taste hundreds of panettones (or panettoni as they should really be called) every year. So we’re excited to share something extremely special with you – we found the very best panettone to put our own name on.
The Sous Chef Milano panettone is a product of decades of panettone expertise. The Sous Chef Milano panettone is produced by a family of bakers in the north of Italy. Each panettone should be prized for its extraordinary heritage and flavour.
This traditional classic panettone is a light and golden cake, rich with butter and sweet with dried citrus fruit.
Special mother yeast
The rich dough is made from their closely-guarded ‘mother’ yeast, the secret to the most flavoursome and lightest sourdough cake.
That ‘mother’ is a sourdough starter fed daily to ensure the freshest and lightest texture that gives the cakes their signature ‘tear’.
Nicola, Sous Chef founder, says “I visited the bakery in summer, and was thrilled to see the panettone ‘mother yeast’ rising in its locked room – known as the ‘treasure room’!
“Only very few people have access to that historic sourdough starter. In fact, a piece of the same ‘mother’ is kept off site for security – locked in a bank vault! Panettoni producers argue about which ‘mother’ produces the best flavour. This one is superb!”.
The finest ingredients
Each panettone is slowly leavened over three days. Only the finest ingredients are selected for the finished cake. The eggs are free range. The raisins are juicy, from tumbling them together with rich rum flavours. Jewel-like citrus fruits are brilliantly large and tender.

Finally, the panettone is hand-wrapped with our brand new 2023 design in thick, luxury paper. Tied with a satin ribbon and tag, it’s ready to give to friends and family.
For the most delicious panettone experience, warm gently before eating. Once opened, seal well, and consume in 5-7 days.
Ingredients: Wheat flour, raisins, candied fruit peels (orange peels, citron peels, glucose-fructose syrup, sugar, concentrated lemon juice), butter, pasteurised egg yolk, sugar, natural sourdough (wheat flour, water), emulsifiers: mono-and diglycerides of fatty acids of vegetable origin, sunflower lecithin, sugar syrup, salt, malted wheat flour, natural flavourings, vanilla extract from Madagascar beans.
