Skinless pistachios are perfect for sprinkling over sweet or savour Middle Eastern dishes. Roughly chop the peeled pistachios and stir through rice salads to add flecks of colour, taste and texture. Or sprinkle over ice cream and rice pudding. A single whole pistachio, topped with a little silver leaf also makes an elegant decoration for pistachio éclairs.
